Rainbow Fruit Parfait Delight

A refreshing and vibrant dessert that celebrates the pure sweetness of nature's candy. This delightful parfait layers different fruit textures and flavours for a guilt-free treat that's as pleasing to the eye as it is to the palate.

Yields: 2 servings Prep time: 20 minutes

Ingredients:

  • 1 large ripe mango, peeled and diced

  • 1 cup fresh raspberries

  • 2 ripe bananas, peeled and sliced

  • 1 cup fresh blueberries

  • 2 kiwis, peeled and diced

  • Optional: Fresh mint leaves for garnish

Method:

  1. Prepare the Mango Base:

    • Take half of the diced mango and blend it in a food processor or blender until smooth and creamy. If needed, add a tablespoon of water to help it blend, but aim for a thick consistency. Set aside.

    • Keep the other half of the diced mango as is.

  2. Prepare the Banana Cream:

    • Blend the sliced bananas in a food processor or blender until they form a smooth, ice-cream-like texture. This may take a few minutes; scrape down the sides as needed. For a firmer texture, you can use frozen banana slices.

  3. Assemble the Parfaits:

    • In two clear glasses or dessert bowls, begin layering your fruits.

    • Start with a layer of the blended mango puree at the bottom of each glass.

    • Carefully spoon a layer of banana cream on top of the mango puree.

    • Add a layer of fresh raspberries.

    • Next, add a layer of diced kiwi.

    • Follow with a layer of fresh blueberries.

    • Top with the remaining diced mango.

  4. Chill and Serve:

    • For the best flavour and a more refreshing experience, chill the parfaits in the refrigerator for at least 15-20 minutes before serving.

    • Garnish with fresh mint leaves just before serving, if desired.
